Manual therapy is a special form of passive moving that is done with the hand (i.e. manually). It is partly diagnostic, partly therapeutic. Manual therapy is an examination/treatment based on "joint play": a few millimeters of movement. The goal of the therapy is to lessen the block/restriction of the joints by using these "joint techniques".
